Can you clarify if the Last Login Date in the Gradebook REST API is the last time the user logged into Blackboard Learn?
This is not the same as Last Access Date that is course related or loggin onto Blackboard Learn. If you can confirm this, that would be great.

I cannot see a Last Login Date in the course grades endpoints.
Do you mean the lastLogin in the users endpoints? Or am I missing something?
When we pulled the gradebook data available, there was a heading of lastlogin so could that be the same thing that is in users?
If that is the case, that is definitely not course based, right?

What endpoint is giving your the lastlogin?
I'm not getting this with my gradebook calls on 3200.0.0. What version of Learn are you using?
Sorry for any confusion. We were combining data and this value like below is from Users:
"lastLogin": "2017-08-24T15:12:00.455Z",
I think that answers my question since it appears (correct me if I am wrong or confirm) that is if from the user data, this is not course specific, right?

CONFIRMED. lastLogin is user attribute and not the same as any course access date.
