Self-Hosted Backup Process suggestions

We're a self-hosted Windows environment, and are hoping to improve our backup processes.  Initially, we were doing snapshots of our file server (Windows server), which are nice and fast.  However, we ran into issues with the snapshot breaking the file lock used by ActiveMQ, so we'd run into issues with multiple brokers following the backups.

We did migrate earlier this year to JDBC based ActiveMQ, but switched back to file-based after encountering more instability.

At this point, we're doing file-based backups, which takes a number of hours.  And should we need to restore, that, too, takes hours.

Are there any other self-hosted schools able to share the mechanics of how they back up their file servers?
