Backups and Upgrades

We've gone through the upgrade process a couple of times now, and are reviewing our processes to identify anything we could do better to help streamline the process.  One of the most time consuming aspects for us is backing up the file server.  When performing an upgrade, do you back up the entire content folder, or do you exclude the storage folder?  It seems that, looking at the structure of the storage folder, the content in it would not be very likely to change during an upgrade, and since it is responsible for about 85% of the storage consumption, omitting that from the backups would save us a couple of hours.
